North Cackalacky


A couple of weeks ago I went to visit my friends in North Carolina. I flew into Charlotte on a Thursday and stayed until Monday. It was the first time I’d seen most of my girls in almost a year, and even two years for one of them. It was a much needed and revitalizing long weekend.



We drove to Wilmington and spent a lot of time on the beach, a first for me in years. One of my sweeties is having a baby in August so we threw a baby shower one night too.

There was some great local food. We even woke up at 5am to watch the sunrise then walked to a place for delish breakfast after. The next day I had the yummiest stuffed french toast!!


Another of my ladies is on a roller derby team! It just so happened there was a bout (game) there that weekend so we attended. It was a first for me and such a blast! I almost want to get in on the action. Aside from the fact that I’m a whimp.


It was such a great time! I can’t wait to go back soon.

Yesterday when I got home from work I did 3.5 miles on the treadmill. It was my longest distance so far so that made me happy. Nobody wanted to cook so it was either leftovers reheated or make your own. I chose to make my own.

In the summertime I love salads. I could probably eat them daily and not tire of the variety and combinations. Last nights was romaine, iceberg mix, tomatoes, broccoli, chick peas and balsamic vinaigrette. It was so good I nearly talked myself into making one for lunch today but I decided to be lazy about it. Big mistake.

Or maybe not? I brought a peanut butter on whole wheat sandwich but it wasn’t sounding tempting at ALL. I ate cheese toast for breakfast and didn’t want more loaf bread for lunch. I wandered around the office and asked co-workers had they grabbed lunch yet. Score! Two of them hadn’t. We walked over to a little coffee shop nearby to grab lunch. I had a milkshake there last week and was excited to finally try their food.

The walk over and back was so nice. It’s gorgeous outside! I ended up getting a turkey club wrap and a strawberry banana smoothie. My wrap was so big I’m saving half for tomorrow. Score! My smoothie was amazing. I could probably have been given a gallon size cup and still want more.


Mama’s Day

I don’t spend a lot of Sunday’s at home, not in the last 8 months or so at least. Not since Man Friend and I started spending so much time together. I had dinner with his family Saturday evening and then we played cards until late, to celebrate Mother’s Day. Yesterday I stayed home though. I accomplished a lot but I felt like I did nothing. Isn’t that weird? Does anyone else ever feel that way?

I’ve been seeing this whole “a spoonful of Nutella wrapped in crescent rolls” on Pinterest for a while. I thought Mother’s Day was a great reason to try it. Um. You should try it too because it is a-freaking-mazing. Like, I wanted to eat all eight of them and let everyone else fend for themselves when it came to breakfast. I seriously just unrolled these bad boys from  the can, drop a tablespoon-ish of Nutella on the widest part, rolled them up and baked them per the package directions. Heaven in your mouff! Go. Try. And then report back to me how amazing it was. I’m thinking peanut butter and a slice of banana would rock too. I’ll let y’all know how that goes.

The local strawberries have started rolling in and we’ve been buying them like they are the last strawberries on planet earth. Ever. They are amazing and sweet and incredible though. Only thing is, the seeds kill my tummy when I eat too many (which is, let us be honest, all the time). We had some macerated in the fridge and I decided to use them for a cake and butter cream frosting. Pretty much all we do is cut them up and then use an old fashioned potato masher to squish them a bit. My mom adds sugar but these are so good it’s not necessary. Pop them in the fridge and all the juices start creeping out and YUM. I poured it on ice cream last week, then I had strawberry shortcake another night.

ANYWAY, after I baked my Duncan Hines strawberry cake I let it cool for a few minutes. Then I took a wooden spoon and poked holes all in it before spooning some of the glorious strawberry goodness on top. Put the whole shebang in the fridge to chill (I love cold cake, am I weird?). I used Wilton buttercream mix because I’m lazy and we had it on hand. Instead of milk in the frosting mix I used more strawberries. It took more than the usual amount of liquid but lemme tell you– best thing I’ve put in my mouth in a while.  Half the cake is gone and there was just three of us eating on it.

And just so y’all don’t think all we had was sweets yesterday… There was a smoked pork butt and smoked chicken, black bean and corn salad, potato salad, cole slaw, vinegar slaw, baked beans and rolls. It’s just I didn’t take the time to get pictures of that stuff. I was too busy eating.



It’s gonna be May!

It’s may first!!! And there will never come a day when I don’t post this somewhere because I’m a *NSYNC fangirl forever. I can’t believe it’s already May!

Yesterday evening when I made it home from work I decided to tackle the shoes in my closet.

They’ve been kinda piled up…well, forever, and I have to dig for things. I usually give up and wear the same pair most days.

We had these metal shelf things from redoing our pantry closet (we hung shelves on the walls in there). I’ve wanted to buy those cube things but they are way beyond my budget.

These shelves worked out pretty well. I should have taken a picture of them before putting my shoes in but they are just metal shelving, nothing fancy. These are similar to what I used.

The finished product. Still could use some organizing but given the space I have, it’s not bad. I put all of my boots on the bottom right shelf, my dress shoes and the like on the bottom left. The two middle shelves have my sandals on the left and my skimmers and converse on the right. The top (which you can’t see for the clothes) are flip flops and a couple pair of dress shoes that are still in the boxes.

We are no strangers to severe weather here. I’ve grown up with it. When I was nine years old a massive tornado hit town and destroyed a large part of the south side of the city. That day gave me a deep appreciation for mother nature and all her power. Since then, I’ve been through many a tornadic season. I’m usually pretty calm about it but after April 2011 and it hitting in my ‘back yard’ I am understandably a bit more on guard.

Yesterday we had forecasts of severe weather coming our way. Schools closed early. My office closed early. I knew we were in for a rough ride. The small town I live in is often a direct path for storms moving out of Mississippi into Alabama. Ah North Alabama, you are so cute >.<

The Puppy Girl and I sat in the bathtub once the tornado warnings started rolling in. I’m always cautious during these storms but yesterday I was freaking out. The Boy has a storm shelter at his house and I was about two seconds from taking off and going over since he’d already tried to convince me I should.


I kept in constant contact with loved ones via text, twitter, instagram, and phone calls. It was iffy a couple of times with storms coming through back to back. We lost power and still don’t have it (I’m currently at work) but no damage, thank goodness. As I was driving in this morning I saw trees down and houses with roof damage. We have more storms moving in this afternoon but meteorologists are speculating they won’t be as strong. Phew!

I hope everyone is staying safe and weather aware and prepared. These storms are pretty wide spread and highly dangerous.

Dressing Table and Make Up Storage

Terrible pictures. I’ll need to take new ones, but this is my makeup set up.



So this is my dressing table and makeup storage area. The table is actually a desk, I believe. My mother picked up the old dresser mirror frame for me and I bought the hanging mirror from Pottery Barn.

On top I keep my makeup brushes in glass vases with those little clear bead things you put in plants. There’s also a double sided mirror, some hair supplies, and other trinkets. The Mac Hello Kitty up stores my mascara, eye brow pencil and gel, tube of foundation and tube of foundation primer — for easy access.


I keep most of my makeup in this drawer caddy. The drawers are just shallow enough to put those little plastic baskets in. Originally I wanted the Ikea Alex cabinet but we don’t have Ikea here and shipping on it would have been $100 (what?!). I picked this up at Walmart and it does the job.

hoppy easter (a little late)


I spent a fantastic day with friends on Sunday. My family doesn’t usually do anything big for Easter. It’s been years since we have, so when he invited me to his family gathering(s), I jumped on the chance.

We spent hours on 42 acres of beautiful property in Tennessee. Good food, good company, kids running around chasing bugs and frogs. He and I sat on a balcony, taking in the distant noises and the companionable silence. We almost fell asleep just before it was time to eat.

The kids were getting restless and wanting to hunt eggs.

I wish I’d taken more time to snap random photos instead of just taking it all in. I guess it just gives me another reason to go visit his aunt soon. Now that she’s told me to come back ANY TIME, I’ll be taking her up on that offer.

sharing some tasty things


Last week we picked up two very large containers of strawberries. Well, I’m only one person and couldn’t eat them before the berries got too ripe. I decided I needed to do something with them and found this amazing Fresh Picked Strawberry Muffin recipe from The Domestic Geek. I baked up a batch last night and let me tell you, they were so yummy! I had a few mishaps, which was totally user error and not the recipe. For example, I may have poured my very cold milk into my very warm melted butter and it got a little lumpy. I also don’t think I mixed the batter enough before scooping it out into my pan. You’d think I’ve never baked a thing before. They turned out well though! It’s definitely a recipe I want to keep using in the future. I’m thinking I may need to buy some fresh blueberries next!


Today I started my morning off with vanilla shakeology mixed with peanut butter and a banana. This is pretty much my go to breakfast lately. This stuff isn’t the most tasty, I won’t lie, but with some stuff added in I really enjoy it. The bonus I’ve found is it has done great things for my energy level all day long. It’s a bit pricey but well worth it!

Every Wednesday we have staff meeting at work. The office has been super cold the last couple of days because our boiler unit has been shut down for the summer. I ended up having to make mint tea to warm myself up. This is the part where I complain about how cold it is outside and how it should be SPRING AND WARM. We had snow flurries yesterday morning. SNOW. FLURRIES.

I usually work through lunch, meaning I sit at my desk and eat because more often than not someone will knock on my door it’s closed. I guess I sorta know what it feels like to be a mom and not be able to go to the restroom on your own. (I do have a coworker that has actually followed me into the restroom to talk business before.)

I’ve been making some variation of Gina’s black bean and corn salad for a few years now. We love it (and so many other Skinny Taste recipes) during the summer. It’s one of those dishes that gets even better after it’s been in the fridge over night. For lunch today I put it on a bed of salad and cut up some grilled chicken. It was incredibly tasty! Sadly this picture is terrible, but since I only took one because I was so hungry and wanted to EAT, this is all you get. Maybe I should start using my camera instead of my phone more often?


And finally, I had to share this because it’s so cute. A friend at work picked this up for me. Sticky notes and stickers as well as a pink glittery ink pen. Target, y’all! They always have the best Hello Kitty things.

random happenings

I can not believe it’s been so long since I’ve blogged!! I’m a couple of book reviews behind and I haven’t done anything exciting with makeup recently. Mostly due to oversleeping every morning.

So this is what I’ve sorta been up to lately…

There’s been this recipe for peach dumplings and apple dumpling floating around everywhere! Who am I to deny myself something when it’s called a dumpling?! Yeah.

A couple cans of croissants, quartered peaches or apples, cinnamon, sugar, melted butter, a canned soda and bake. I tried it last week and let me tell you, it’s not much to look at in photos but it is yuuuuummy. Now I’m thinking…how amazing would it be with strawberries?!!


Played Barbie’s with a close friends daughter. Notice the makeup and tattooing she’s been doing lately. Some of these dolls belonged to me. I kept them stored in an air tight container for years and years until finally giving them up.



Hung out with friends and watched a dog fall in love with my guy. Though I can’t say I blame him for that.

I need to get back to taking pictures daily. Otherwise I feel like I have next to nothing to blog about!


the one where I talk about food



I love a bit (or a lot) of love for pimento cheese. Maybe it’s in my southern girl roots? I don’t know if that’s likely though, since I don’t care for a lot of southern dishes (no sweet tea?! *gasp*). I could eat pimento cheese every day though. Let’s be honest…I could eat any kind of cheese every day. It’s one of my food weaknesses. But pimento cheese is all smooth and creamy and mmm. I’ve never made it home made (though I have always wanted to) but we’ve always bought the same brand for as far back as I can remember. We keep a tub of regular pimento cheese and jalapeno pimento cheese in the fridge at all times.

For dinner Monday night we had home made beef stew and grilled cheese sandwiches. I pretty much adore a grilled cheese. Case in point, my boy made me one for dinner just on Saturday night. His version was just cheese slices, my version was jalapeno pimento cheese. It was ooey and gooey and messy. It was also one of the best things I’ve ever put in my mouth!



I always pack my lunch for work. Sometimes it’s a sandwich. Other times it’s leftovers from dinner. I very rarely (maybe once every couple of months) go out for lunch. I don’t see the point in trying to rush out to pick something up when I could just relax in my office. I’m also cheap.

Yesterday I brought leftover chicken and pineapple pizza, but when a co-worker swung by to ask if I’d like a grilled chicken salad, I said “yes please, and make it a double” (ok, I didn’t REALLY).

It was the most yummy and filling salad! Grilled chicken, tomato quarters, shredded cheese, cucumbers, grilled asparagus, mushrooms, black olives (which I removed because yuck) on a bed of mixed greens. The dressing though! Jalapeno ranch, home made in house. Are y’all seeing a jalapeno theme?

I’m glad I had the protein in that salad because I needed the energy boost to make it through my work day. I was slammed and ended up working until after 5 o’clock, trying to catch up on things I’ve missed. I was so tired when I got home I can’t even recall what I had for dinner. Though I know there was something.

This chick and I hung out and watched tv after I showered and put on pj’s. She had a hair cut over the weekend and with our temps dropping again had to put on her sweater yesterday. We can’t wait for Spring. Yay for the last day of Winter!
